Ingredients

400 g Spaghetti
50 g Lean Beef Mince
15 ml Cooking Oil
1 item Medium Onion (Finely Chopped)
1 item Medium Carrot (Finely Diced or Grated)
1 item Celery Stalk (Finely Chopped)
2 item Garlic Cloves (Crushed)
30 g Tomato Paste
400 g Canned Chopped Tomatoes
250 ml Beef Stock
5 ml Dried Mixed Herbs
2.5 ml Dried Oregano
2.5 ml Salt (or to Taste)
1.25 ml Ground Black Pepper
5 ml Sugar (Optional)
30 ml Grated Parmesan Cheese per Serving (optional)
1 item Fresh parsley or Basil for Serving (optional)

Method

1. Heat the cooking oil in a large frying pan or saucepan over medium heat.
2. Add the onion, carrot and celery. Cook for approximately 5 minutes, stirring regularly, until the vegetables begin to soften.
3. Add the garlic and cook for another 30 seconds.
4. Add the beef mince. Break it apart with a wooden spoon and cook for 7 to 10 minutes, until browned and no longer pink.
5. Stir in the tomato paste and cook for 1 minute.
6. Add the chopped tomatoes, beef stock, mixed herbs, oregano, salt, black pepper and optional sugar.
7. Bring the sauce to a gentle simmer. Reduce the heat and cook uncovered for 25 to 30 minutes, stirring occasionally. The sauce should become thick and rich.
8. While the sauce cooks, bring a large pot of lightly salted water to the boil.
9. Add the spaghetti and cook according to the packet instructions until tender but still slightly firm.
10. Drain the spaghetti and divide it between four plates.
11. Spoon the Bolognese sauce over the spaghetti.
12. Serve with grated Parmesan cheese and fresh parsley or basil, if desired.

Cooking Tips
* Add a small amount of water or stock if the sauce becomes too thick.
* For a richer flavour, allow the sauce to simmer for an additional 15 to 20 minutes.
* The vegetables can be grated if you prefer them to blend into the sauce.
* Leftover sauce can be stored in a sealed container in the refrigerator for up to three days.
